The Radicchio Variegato di Castelfranco IGP is also called "the rose you eat" due to its shape.

It is born from the cross between the late red Treviso radicchio and the escarole endive and is grown in the flat area of central Veneto

Zucchini or courgette is a summer squash which can reach nearly a meter in length, but is usually harvested immature at 15 to 25 cm (6 to 10 in).

Along with certain other squashes and pumpkins, it belongs to the species Cucurbita pepo. Zucchini can be dark or light green. A related hybrid, the golden zucchini, is a deep yellow or orange color.

The globe artichoke is a variety of a species of thistle cultivated as a food.

The edible portion of the plant consists of the flower buds before the flowers come into bloom. The budding artichoke flower-head is a cluster of many budding small flowers (an inflorescence) together with many bracts, on an edible base. Once the buds bloom, the structure changes to a coarse, barely edible form.

The onion plant has been grown and selectively bred in cultivation for at least 7,000 years. It is a biennial plant, but is usually grown as an annual. Modern varieties typically grow to a height of 15 to 45 cm (6 to 18 in). The leaves are yellowish- to bluish green and grow alternately in a flattened, fan-shaped swathe. They are fleshy, hollow, and cylindrical, with one flattened side.

Scallion, green onion, spring onion and salad onion are English names (with many other regional names throughout the world) for various Allium species. Scallions have a milder taste than most onions. Its close relatives include the garlic, shallot, leek, chive, and Chinese onion.

The bulbs of many Allium species are used as food. But the defining characteristic of scallion species is that they lack a fully developed bulb. In common with all Allium species, scallions have hollow, tubular green leaves, growing directly from the bulb. These leaves are used as a vegetable; they are eaten either raw or cooked. The leaves are often chopped into other dishes, in the manner of onions or garlic.

Savoy cabbage is a winter vegetable and one of several cabbage varieties.
It has emerald green and crinkled leaves. The leaves are crunchy and tender.

Celery (Apium graveolens) is a marshland plant in the family Apiaceae that has been cultivated as a vegetable since antiquity. Celery has a long fibrous stalk tapering into leaves. Depending on location and cultivar, either its stalks, leaves, or hypocotyl are eaten and used in cooking.

Celery seed is also used as a spice; its extracts are used in medicines.
